High Spirits Dry Gin is distilled to the principles of the London Dry style. High Spirits take their vodka as a base ingredient on its own, rather than a blank slate to build their gin upon. With this as the starting point, Michael and Jade use a blend of local and exotic botanicals to carefully craft their Western Australian expression of a Dry Gin.
Clean and balanced, the Dry Gin includes juniper, coriander, orris root, angelica root, cassia and others to make up the bill of botanicals which are all placed in the vapour path to be gently infused throughout distillation to carry some of the more delicate flavours over. The alcohol vapour passes the botanicals, picks up the flavour, is condensed and our signature dry gin is the result. All cuts are made by using the distiller’s senses, ensuring the finest quality is achieved. They add only water following distillation. High Spirits Dry Gin is non-chill filtered, hence the spirit may take on a pearlescent lustre once diluted.
Everything is crafted in house – High Spirits Dry Gin is truly an example of grain to glass.
Makes a great G & T and will also stand proud in any classic cocktail.
Tasting notes: A rich mouth feel, and a dry botanical profile with an underlying vanilla and slight Sichuan peppery finish.
High Spirits Distillery: High Spirits Distillery is an independent family owned and operated Artisan Distillery producing spirits in small batches out of Perth, Western Australia. It is the culmination of many years work by brothers Michael and Jade and the realisation of a long-held dream.
Using 100% Western Australian grown grains, the High Spirits Distillery team work hard to ensure only the best quality spirit is bottled. They produce everything in house, from scratch.
Grain to Glass - the true artisan way: Michael and Jade start by sourcing grain from the South West farming region of Australia. Using 100% Bio-Dynamic Triticale, they mill, mash, ferment and distill on-site. They then employ a mixture of traditional distilling techniques and modern designed equipment.
Awards: Winner of several major awards at The London Spirits Competition, including a Gold medal, Gin of the Year, Best in Show (Australia) and Best Spirit of the Year (by Quality).
