Eden Mill - St Andrews
This Oak Gin has been rested in ex bourbon casks. Using the same base as the Hop Gin (minus the hops of course!), the gin is only rested for a few weeks at most so that the wooded effects don’t overpower the spirit. It delivers a warm finish as lovely as a sipping gin/whisky; rich oak spice and brown honey toast finishing on sweet caramel, vanilla and sugarcane. The ginger really brings out the spice and woodiness of Oak gin. Sweet and rich-spiced fruits and spices (cinnamon & star anise) are evident. Soft delicate vanilla and fudge mingle with the ginger. Just marvellous!
About Eden Mill – St Andrews: Based on the site of a historic distillery on the banks of the River Eden near St Andrews, Eden Mill were the first to make spirits in the region for 150 years.
The Eden Mill story started with a mission to revive the lost art of distilling and brewing in St Andrews. As Scotland's first single-site distillery and brewery, making gin, whisky and beer, Eden Mill spirit is created by their own distillers in copper pot-stills and exhibit a wide range of flavours from botanicals sourced from the local area, as well as from around the world.
As creators of craft gin, whisky and beers, their team of distillers have the opportunity to marry the best practices from all these disciplines.
